Gluten-Free Breakfast Muffins 🧁

A soft, nourishing muffin that’s naturally sweetened and packed with protein and fibre, ideal for busy mornings when you want something quick, balanced, and satisfying.


Prep time: 5 minutes

Bake time: 15-20 minutes

Cooling time: 10 minutes


Ingredients:


  • 150g blended oats (or oat flour)

  • 200g unsweetened Greek yoghurt

  • 2 ripe bananas

  • 2 eggs

  • 1 tsp baking powder

  • Fresh Berries




Method:


  • Preheat oven to 200°C and lightly grease or line a 12-cup muffin tray.

  • Add all ingredients to a blender and blend until smooth.

  • Pour the mixture evenly into the muffin tray.

  • Add Berries

  • Bake for 15–20 minutes, until lightly golden and set.

  • Allow to cool for 10 minutes before removing.
