Gluten-Free Breakfast Muffins š§

A soft, nourishing muffin thatās naturally sweetened and packed with protein and fibre, ideal for busy mornings when you want something quick, balanced, and satisfying.
Prep time: 5 minutes
Bake time: 15-20 minutes
Cooling time: 10 minutes
Ingredients:
150g blended oats (or oat flour)
200g unsweetened Greek yoghurt
2 ripe bananas
2 eggs
1 tsp baking powder
Fresh Berries
Method:
Preheat oven to 200°C and lightly grease or line a 12-cup muffin tray.
Add all ingredients to a blender and blend until smooth.
Pour the mixture evenly into the muffin tray.
Add Berries
Bake for 15ā20 minutes, until lightly golden and set.
Allow to cool for 10 minutes before removing.
