No-Bake Brownies 🌿

These no-bake brownies are satisfying and naturally sweetened with dates. They’re packed with healthy fats, fibre, and plant-based goodness to keep you full and energised, without refined sugar or baking required.
They come together in under 10 minutes and are perfect for a nourishing treat on hand during the week. Once set, they keep well in the fridge for up to 7 days and can be frozen for up to 3 months.
Prep time: Under 10 minutes
Chill time: 1 hour
Ingredients:
1 cup cashews
1⅓ cups medjool dates, pitted
½ cup nut butter
½ cup unsweetened cacao powder
⅓ cup crushed pecans (optional)
Method:
Grind the cashews, dates, nut butter, and cacao powder in a food processor until finely ground.
Transfer the brownie mixture to an 8-inch square baking pan. (If you line the pan with parchment paper, it will make it easier to remove the brownies.)
Use your fingers to press the mixture evenly.
Sprinkle the top evenly with the crushed pecans, pressing them into the top of the brownies.
Cover and refrigerate for at least 1 hour before cutting into squares.
