Sesame Cookies 🍪

Creamy coconut curry

These sesame seed cookies are naturally sweetened and packed with healthy fats, fibre, and calcium, making them a fantastic choice for bone health. They come together in under 15 minutes and are perfect for a nourishing treat during the week. Once baked, they keep well in an airtight container for up to 7 days and can be frozen for up to 3 months


Prep time: 10 minutes

Bake time: 8 minutes

Cooling time: 5 minutes


Ingredients:

  • ½ cup sesame seeds

  • 1½ cups almond flour

  • ½ teaspoon baking soda

  • ¼ teaspoon sea salt

  • ⅓ cup honey

  • ⅓ cup tahini

  • 1 teaspoon vanilla extract


Method:

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

  2. Put the sesame seeds in a bowl.

  3. In a separate small bowl, whisk together the almond flour, baking soda, and sea salt.

  4. In a large bowl, mix the honey, tahini, and vanilla extract until well combined.

  5. Add the dry ingredients to the wet ingredients and stir until fully incorporated.

  6. Using a spring-loaded cookie scoop, scoop the dough into balls. Roll each ball in the sesame seeds, then flatten them into ¼-inch-thick rounds.

  7. Transfer the rounds to the baking sheets, spacing them about 1 inche apart.

  8. Bake for about 8 minutes, until the bottoms are golden. Shift the pans from top to bottom halfway through baking.

  9. Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a rack to cool completely.

  10. The cookies may look slightly soft and undercooked when you take them out of the oven, but they will firm up as they cool.
