Super Simple Everyday Dressing 🌿

Creamy coconut curry

This simple, flavour-packed dressing is my go-to when meals feel a bit boring. It instantly upgrades plain chicken, salmon, tofu, stir-fries, grain bowls, or roasted vegetables, without needing fancy ingredients or extra cooking.


It’s made with just three pantry staples and balances healthy fats, savoury depth, and a touch of natural sweetness. Perfect for busy days when you still want food to taste good.


It comes together in under 2 minutes and keeps well in the fridge, making it ideal to have on hand during the week.


Prep time: 2 minutes

Storage: Up to 5 days in the fridge


Ingredients:


  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon soy sauce or tamari (use tamari if gluten-free)

  • 1 teaspoon maple syrup


Method:


  1. Add the olive oil, soy sauce or tamari, and maple syrup to a small bowl or jar.

  2. Whisk or shake well until combined.

  3. Taste and adjust if needed, a little more maple for sweetness or soy/tamari for salt.


That’s it.


How to Use:


  • Drizzle over plain grilled chicken or turkey

  • Spoon over baked or pan-fried salmon

  • Toss through a stir-fry at the end of cooking

  • Mix into roasted vegetables once out of the oven

  • Add to grain bowls, noodle bowls, or salads


Optional Add-Ins:


  • A squeeze of lemon or lime for freshness

  • A teaspoon of sesame oil

  • Fresh garlic or ginger for extra flavour

  • Chilli flakes for heat


Even without extras, this dressing works beautifully and makes simple meals far more enjoyable.
