The Salmon Nourish Bowl š

This simple salmon bowl is packed with protein, fibre, and healthy fats to support energy and blood sugar balance. Salmon provides omega-3 fats for brain and heart health, while broccolini and quinoa add fibre, minerals, and slow-release carbohydrates. Itās a nourishing, balanced meal thatās perfect for a quick midweek dinner!

Serves: 2
Ingredients:
2 wild-caught salmon fillets
1 large bunch broccolini
½ cup dry quinoa
3 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon maple syrup
Sea salt and black pepper
1 tablespoon sesame seeds
Method:
Preheat the oven to 180°C (350°F) and line two baking trays with baking paper.
Place the salmon fillets on one baking tray.
In a small bowl, mix the olive oil, soy sauce, and maple syrup. Pour the mixture over the salmon and gently rub it into the fillets so they are well coated.
Spread the broccolini across the second baking tray. Drizzle with a little olive oil, season with sea salt and black pepper, and toss gently so everything is coated.
Place both trays in the oven and roast for about 20 minutes, or until the salmon is cooked through and the broccolini is tender.
While the salmon and broccolini are roasting, cook the quinoa according to the packet instructions.
To serve, divide the quinoa between two bowls. Flake the salmon over the top and add the roasted broccolini.
Spoon any remaining sauce from the baking tray over the quinoa and finish with a sprinkle of sesame seeds.
